Coco Loco
1 oz dark rum 1 oz light rum 1/2 oz vodka 1/2 oz creme de bananes 1/2 oz pineapple juice 1/2 oz coconut cream 1/2 oz sugar syrup
Pour
the rums, vodka, creme de bananes, pineapple juice, coconut cream and
sugar syrup into a cocktail shaker half-filled with ice cubes. Shake
well, and strain into a chilled highball glass. Garnish with a
pineapple wedge, and serve.

Welcome to the Autumn edition of the Del Pacifico Newsletter! For me, this time of the year is always reminiscent of the childhood feeling of possibility and new beginnings. This year, our new beginnings come in the form of a custom home and our ever-growing family. Don William and the Mega Construcciones team have completed the finishing touches on Casa Contenta and it has turned out even more beautiful than anticipated. Next time you are down at Del Pacifico, please ask Jason or Fernando to take you up to see the house and its spectacular views. This is a wonderful example of the standard of construction that Don William has set at Del Pacifico, the standard that will be adhered to when you build your own piece of paradise. In addition to Casa Contenta we added 2 new families to our Del Pacifico family after our wonderfully successful August Gathering. Casa Contenta, with its beautiful wrap around verandas and infinity poolOn the other hand, with autumn comes the end of summer and the beginning of the cold weather, which I find much less exhilarating (is it any wonder that I've built my career with a company that is based in Costa Rica?). Leslie's Gathering Wrap-Up Report
This August, Del Pacifico hosted an end of summer Gathering for 25 guests. We had visitors from all over the US and even as far as Venezuela! As usual one of the best parts of the trip was exploring Del Pacifico on horseback and meandering along the Esterillos & Bejuco beaches. Most of our guests took a guided tour of Manuel Antonio National Park and enjoyed the views at El Avion, a restaurant that overlooks the ocean cove of Manuel Antonio. We also had a few adrenaline junkies take a zip line tour through the canopy. At the end of each day, everyone came together to shre stories and recount their
adventures. However, the true highlight of the weekend was to be treated to a personal tour by Mitchell Herman in his family's newly completed

Fernando's Recipe Corner
Costa Rican Caviar
Finally football season has arrived, and so far looks like a
good season (although not for Redskins fans like me...), if you are thinking of
an easy dish for your tailgate party, here is one that will be different and
will generate a lot of conversation, it's known as the "Costa Rican Caviar" =
Black Bean Dip.

2 (16 oz.)
cans black beans, drained (save the liquid)
2 tbsp. Salsa Lizano (if you don't have it... you've never been to Costa Rica) - substitute Worchestire sauce if necessary
1 ½ tbsp. Butter
2 Clove Garlic
Splash of Tabasco Sauce
Salt and Pepper to taste
Shredded Cheddar (optional)
Tortilla chips
Put in the blender the beans, Salsa Lizano, and salt and
pepper, process in the blender (with some of the liquid from the beans) until
smooth.
In a pot, melt the butter and sauté the minced garlic in
until golden, allowing them to take on a toasted color, add to pot the beans &
Tabasco, and slow cook for 10 minutes removing constantly, check the seasoning.
Serve with your favorite tortilla chips, garnished with some shredded cheddar.
If you use a foil disposable container you can heat it up on the grill during
your tailgate party.

Stace & Steph's Excellent Adventures Relaxing in Arenal
Last May, we decided to expand our horizons and take a few
days to explore an area outside the Central Pacific. We visited Arenal in hopes
of seeing one of the ten most active volcanoes in the world. On clear
days, the erupting volcano is completely visible, however we were traveling at
the very beginning of the green season so the odds of actually seeing it
were slim. Arenal is northwest of San Jose and approximately 2 hours by
car but tour bus and air transit are available. We opted to rent a car to
be on our own schedule; keep in mind that there are no formal addresses in
Costa Rica so MapQuest is not an option. Much to everyone's surprise, we made it safely to our
destination without getting lost or driving off the mountain!
The Spectacular View from Our Cabina at Montana Del Fuego
We stayed at a charming hotel called Montana del Fuego (Fire
Mountain) which offers cozy "cabinas" with panoramic views of the
volcano. The hotel had a great spa of which we took full advantage! The hotel is located only 9 kilometers from the closest town, La
Fortuna, and within a short distance from area attractions, including the Baldi
Hot Springs. The natural hot springs have 30 pools (hot and cold), hiking
trails, a restaurant and swim up bars all with perfect views of the
volcano. For $25 we purchased a day pass which allows you to come and go
from 10 am until early evening. Our morning at the springs was overcast
with passing light showers but by the afternoon, the clouds cleared and we were
able to see the volcano for about 2 minutes!
When you plan your next trip Costa Rica, we would definitely
recommend a stay in Arenal...there is so much to see and do!
The area is very lush, the volcano is spectacular, and there are plenty of
activities to offer. This can be economical like we did but there
are certainly more luxurious accommodations available. But, the best part
about Costa Rica is the people...As always friendly, helpful and proud of their
country.

Jason's Fishing Report Local Fishing in our Estuaries
Fishing has been very slow lately but last week I went to Palo Seco Estuary in El Rover del Mar with Captain Patrick to try some trolling.
Early in the morning we had a couple strikes; on our
way out Patrick had a heavy strike, at first we thought he snagged something
but then it started to fight. It took about five minutes to get in, it was a nice King Mackeral
caught on a white rapala. This was the first time we ever saw or heard of a Mackeral
being caught inside the estuary. I had some shrimp and I tried floating them along the edge of the
manglar without any luck, when we got to the the boat launch I decided to toss
the shrimp right at my feet and the next thing I see are
5 medium size snapper coming and feeding on them!

around Playa Hermosa was good we were catching one after another of small
Barracudas.
Later in the day we tried bottom fishing with some sand
shrimp to see if we could catch some snapper but no luck we just caught " pez
chancho" (pig fish). This fish has
skin like leather but the meat is similar to lobster. We went back to trolling and Frank
caught a nice snapper, then we started to lose lures because we ran into a
school of needle fish, which have razor sharp teeth and love to bite at the
fishing line. Thankfully, this was at the end of the day. Once we get to summer the trolling will be much better- just a couple of months away!
