Guaro Sour

Guaro is a local liquor made from sugar cane- be careful, it can be lethal!

2 shots of Guaro
2 oz. fresh lime juice (not bottled)
1 oz. Kola Syrup (grenadine will substitute if you can't find Kola)

Combine 2 shots  Guaro, 2 ounces of fresh lemon juice and mix them in a glass filled with ice, add 1 ounce of Kola Syrup stir and enjoy.
Steph's Travel Tip
There is a $26 departure tax that you will need to pay before you can leave Costa Rica. This can be paid on the day of departure at the airport or it can be paid at some hotels for a minimal service charge.

In the world of progress - good news on the new highway...the toll plaza near Orotina opened last week! This must mean the completion of the road really is in the near future!

New and note worthy in Costa Rica

Nature Air Discounts...Nature Air is offering a great way to get to Del Pacifico for a deep discounts right now! You can fly from San Jose to Quepos for $19 and then rent a car in Quepos to drive the rest of the way to Del Pacifico. Even better: Nature Air has been carbon neutral since 2004! The airline offsets 100% of their fuel emissions and in the past 5 years has contributed enough to save 500 acres of rainforest on the Osa Penninsula.

Georgia Tech in Costa Rica Opening in August in San Jose will be the Georgia Tech Trade Chain Innovation and Productivity Centers which will aim to improve supply chain management for companies producing in Costa Rica.

Changes to the Colon Beginning next year, the central bank will begin issuing 20,000 & 50,000 colones notes. This will not be the only change as the currency will also be changing size and adding security features. Each bill will be a different size & color (increasing in size as they increase in value) and will feature different personalities and the theme "biodiversity".  Probably the most important changes will be that the new notes will include features to make the notes easy to differentiate for the visually impaired & the elderly and will also be improved to help make the notes uneasy to counterfeit.

Hollywood Sets Its Sights on Costa Rica...I think Hollywood is trying to make it up to Costa Rica for the whole "I'm a Celebrity...Get Me Out of Here" debacle. The word is that a film has been announced that will be set in the world of online gambling in Costa Rica (the Vegas of online gambling). No word yet on whether the film, written by the screenwriter of "Rounders" and starring Leonardo DiCaprio, will be filming here but we'll be keeping our fingers crossed. We did hear however, that the unofficial head of online gambling in Costa Rica is concerned because he thinks George Clooney would be more suited to play him than Leonardo DiCaprio.

Electrical Rates to Drop! This has been a big week for electricity in Costa Rica. The government has requested that ICE lower  electricity rates between 10 and 14%.

New Cellular & Internet Services On June 22nd, the new Superintendent of Telecommunications approved 6 companies to begin offering cellular & internet services in competition with ICE (for cellular) and Racsa (for internet) as soon as they are ready to begin doing business. While most of the companies will be offering similar services to those already available there are 2 new additions- voice over IP calling and prepaid calling services. There are 32 further companies waiting in the wings to be approved Also, earlier this month ICE announced that they will be releasing 60,000 new cell phone numbers. This move is expected to create 15,000 new jobs.

Looking for a fun family outing? I highly recommend the Jungle Crocodile Safari Boat Tour on the Tarcoles River.  The tour is about a two hour long ride in a covered pontoon boat. Your bilingual guide who will teach you about the river and the different species of fuana living in it.

The route leads up the river to the banks where the crocodiles sun themselves and down into the mangrove forests where the river meets the ocean.  During this relaxing, information filled tour there is the opportunity to see many of the 56 species of birds commonly sighted along the river.  Visitors also see iguanas, fish, insects, and (of course) crocodiles which your brave guide will feed.  It is an activity that family members of all ages can enjoy!
Costa Rica Ranked 5th Cleanest Globally

The Environmental Protection Index (EPI) developed by Columbia and Yale Universities ranked Costa Rica #5 worldwide. This ranking is the best in the Americas and far ahead of the US.  Costa Rica was bested only by famously clean European countries like Switzerland, Norway, and Sweden. Costa Rica even placed ahead of pristine New Zealand. The U.S., once a leader in environmental protection, failed to keep pace. Its overall EPI score of 81 putting it in 39th place on the list.

With a per capita income of $11,600, far below the developed countries that dominate the top ten on the list, Costa Rica has accomplished more than any other country globally on a cleanliness-per-dollar basis. Its strong ranking was thanks to its high percentage of permanently protected lands, ongoing reforestation, clean air except in its capital, and its fight against global warming. Costa Rica also has very strict environmental regulations, including those on new real estate development.

Another Spectacular Sunset

From its inception, Del Pacifico has been a conscientious steward of environmental issues.  Del Pacifico has plans to reforest a portion of the project beginning in July.  Spearheading this project will be the Tilghman Strudwick, Barry's son.  Tilghman, a recent high school graduate, will be working at Del Pacifico this summer where one of his initiatives will be to implement the reforestation project for Del Pacifico.  He will also be working in the Sales Office and will assist the Del Pacifico team at the World Surfing Championships in late July.

Local Fishing in Esterillos & Deep Sea Fishing From Quepos

The estuaries have been good for pan size snapper. The other day I went with my family and we caught around 20! We released them all hoping to catcHorseback Ridingh them again, but twice the size, in a few months. There have been mixed reports along the beaches. In Bejuco the fish (especially snook) have been feeding along shore but not biting anything thrown at them.


I talked to a couple guys yesterday and they said Playa Bandera has been very good and they have caught a number of fish- snapper, rooster, snook (a couple in the 40 pound range) and jacks. They have been using live bait (mullet) which you catch using casting nets along the surf. If you see a brown foam along the beach, this is released from the rivers and estuaries during the rainy season amongst this foam is the mullet which follows this foam around in the ocean to feed from. When you find this try to throw your net and hopefully you can catch your bait and start fishing.

In Esterillos Oeste a 44 pound snapper was caught by a local using a hand line in the surf at night with half a sardine with the head as bait. Night fishing is always productive for the large snapper along the beach.
Fernando's Recipe Corner

 Tres Leches Cake

Ingredients:
1.5 cups of flour
6 eggs
1.5 tsp baking powder
1 tsp vanilla extract
1 tbsp water
1 cup whipping cream
1 cup evaporated milk
1 cup condensed sweet milk
1/4 cup dark rum
1 cup sugar
whipped cream

Preparation:
Preheat the oven to 350 degrees. Sift the flour and the baking powder together. Mix the eggs and the sugar until pale white, add the flour and baking powder, continue to mix. Once mixed well, add the vanilla extract & water, mix all together. Pour mixture into a greased baking dish. Bake at 350 degrees for 20 minutes or until a toothpick comes out clean. Remove from the oven. Use a bamboo (or kebab) stick to put holes all over the cake, about an inch apart each.
In a pitcher, pour the 3 milks and the rum. Stir them together. Pour the mixture over the cake while still warm. Put it in the fridge until cold. Once it is cold,  cover it with whipped cream and enjoy!
Tim's Eco Facts

I'd never given much thought to how a septic system worked. It's only really an issue when they STOP working. I wasn't even sure what could make a hole in the ground stop working until I was reviewing one of the options that Del Pacifico has started using in our construction. The following information is useful for any homeowner or potential homeowner.

The reason that septic systems fail is that the anaerobic bacteria that live in the septic system produce something called a "biomat" that prevents the passage of water and effluent thought the disposal field. The option that we've started using at Del Pacifico (it has been used in a custom home and is planned to be used in the Portofino Condos) is called he SludgeHammer. What this does is introduce a colony of (aerobic) bacteria, and oxygen. The system cycles the septic through the oxygen/bacteria, the end result being that the water is cleaned. We will cycle this clean water back through and it will be used in the toilets.
