|
2 oz. tequila 1 oz. triple sec 1 oz. fresh lime juice Salt
Squeeze
the lime juice into a mixing glass over ice. Add tequila and triple
sec. Run squeezed lime along the edge of the intended glass then roll
the glass rim in salt. Cover the mixing glass and shake up the
margarita- strain into glass and enjoy!

Steph's Travel Tip
|
Although everywhere in Costa Rica accepts US dollars, it shows respect to the local culture to use colones. No need to pick them up before your trip- the ATM machine in the baggage claim area of Juan Santamaria International Airport in San Jose has one of the best exchange rates I've seen.

Dear Barry,
Welcome to Del Pacifico's first Monthly Newsletter. As this is our first newsletter, we would love to hear your feedback and please let us know if there is anything else you would like to see featured in this space. The Big News is that we have signed an agreement with a hotel operator to run a 5 star boutique hotel on the ocean side of our property. This is sure to be a wonderful addition to Del Pacifico. Community is the cornerstone of Del Pacifico. It is our wonderful owners & friends and unbelievably amazing staff that give our community its soul and truly make Del Pacifico a family. My hope is that the newsletter will serve as a way to keep in touch with the family and allow you all the chance to keep up to date with Del Pacifico even if you haven't been able to visit recently. Our Gatherings are the keystone to our growth and the best way to understand the incredible investment potential of Del Pacifico firsthand with no sales pressure. In order for our community to grow, we need you to be our ambassadors and invite your friends to contact us about visiting Del Pacifico during a Gathering.

Steph's What's New at Del Pacifico Report Off to a Strong Start
January & February have been super months here at Del Pacifico with 6 lots sold! We have one lot left on Parcel 6- all others are now reserved or under contract. Our architectural team, headed up by Jorge Bonilla, is hard at work on the construction plans for 2 new homes. One of which is Casa Buenos Aires which was designed by Dhiru Thadani and will be 4,000 square feet. We expect to break ground on Casa Buenos Aires in April. Casa GuanacasteCasa Guanacaste, Don William's passion project, is well under way and promises to be stunning addition to the Del Pacifico landscape. Currently listed for $1,750,000- please contact our Town Center Office for more information. We welcomed a new member of the Del Pacifico family on Saturday, January 24. Our cowboy Pata's wife Tatiana gave birth to a beautiful baby girl named Valentina. Mother and baby are both doing well and the proud papa hasn't stopped smiling since the day she was born. Felicidades! Our Pyramid Cafe has been open for almost a year now. Open for breakfast & lunch, the cafe feature typical Costa Rican fare. Tired after a day of riding & surfing? Leslie's Gathering Report January & February a Rousing Success!
We started off 2009 with a very fun & successful January Gathering. Thirty-three
guests from all over the US joined us to tour Del Pacifico and learn about our community. Saturday night's "tipico" dance show and Latin dance lesson had everyone on their feet and dancing in a congo line around the tables! A native dancer entertaining the January Gathering guests
Our February Gathering
hosted 35 guests from around the world- including a couple who came all the way from Hong Kong to join us! It coincided with the annual Festival of the Mules; where we were the guests of honor at the
annual Del Pacifico-sponsored rodeo. We had a spectacular view of the bullriding competition from the Del Pacifico skybox- we were so close, you could almost touch the bulls. We shared our sky box with Senorita Parrita, members of the local government and a handful of Costa Rican national heroes. Juan Cayaso, Javier Delgado, Jose Carlos Chavez & Claudio Jaro were members of the Costa Rican National Team that went to the FIFA World Cup in Italy in 1990, the first time Costa Rica qualified. All money raised from the Festival de Las Mulas was donated to the Municipality of Parrita to benefit their schools.

Fernando's Recipe & Story Corner
This is a perfect recipe for
winter: Easy Fish
Soup
6 fine dices garlic clove
2 tbs of olive oil
2 minced onions in
Julian (julienned)
2 minced sweet chili peppers "bell
pepers" in Julian
1 Large can of sweet corn
1
pound of fish (tilapia or
seabass) cut in strips (like chicken fajitas)
2 cups of evaporated milk light
4 cups of fish stock
1 carrot minced in Julian
1 "chayote" minced in Julian
1 plantain minced in Julian
1/4 cup of white wine (optional)
salt and pepper
Preparation: In a deep pot, saute
the onion on the olive oil until it turns translucent, incorporate garlic and
bell pepper, and fries by a minute. Then adds the fish and fries it for 30
seconds. Incorporates the stock of seafood, wine and the vegetables, boils it by
10 or 15 minutes, or until they are tender vegetables. Once smooth, incorporates
the sweet corn and the evaporated milk, let boil by 5 minutes. Serve it with
chopped parsley and croutons for garnish.
Our newest cowboy, Fernando The Gigantic Rice and
Beans...
One day one of our owners, whom we
will keep anonymous, came to me and ask me about the famous Gallo Pinto
(traditional Costa Rican breakfast rice and beans), so I told him the recipe,
and I said, why don't you cook some rice and use it the next morning for the
Gallo Pinto... well next morning I was setting in my office and I saw him walking
down to the convenience store in Bejuco and back... then after ten minutes again...
to the convenience store and back to his place... and amazingly a third time
again... somewhere around 9:30 in the morning he came back and said... "well I guess
is a little late to invite you for breakfast, can you ask the guards if they
want some of my rice and beans?" Then I ask, "the guards? Sure how many of
them?"... "all of them, and also Pata and his cowboys and whoever shows up... ", "
how comes"... then he said, "well I did the first batch and it was looking too white
to me... then I went to the store for another can of whole black beans... then it was
too dark, so I added more rice... well after four cans of beans and two pounds of
rice... well I have breakfast for like a hundred
people".

Lolly's Local News Report Want to know what's
new and note worthy in Costa Rica?
Well,
just up the beach, the community of
Esterillos Oueste is establishing a lifeguard program. Four young
local surfers who participated in
the International Surfing Association's Junior Surfing Competition have
been selected as Oueste's first team of lifeguards. After completing
an internationally recognized lifeguard program, the four will keep
watch over the beach in Oueste. The
program has been financed by community organizers who also helped
commission
two lifeguard towers. Great news for the
local community!

Please note: all drivers should be aware that as of December
2008, Costa Rica has instituted new and much stricter driving laws. Traffic violation fines have increased
significantly, and most importantly, the punishment for speeding and drunk
driving will be jail time. So, please be
extra cautious when navigating the roads!
For all of our eco-tourists, Costa Rica planted 7 million
new trees last year. This worldwide
United Nations initiative called "Go Plant a Tree" was kicked off by a group of
Tico youths. Both public and private
institutions contributed to the effort.
Way to go!
And in the "Good News" department, 2008 Costa Rican tourism
saw an increase with its 2 millionth tourist arriving in December. This is up from 1.9 million tourists arriving
in 2007. And, so far, despite the world
economic down turn, 2009 tourism numbers are keeping pace.

Keep your calendars open this summer for the World Surfing
Championships at Playa Hermosa in late July, early August. This promises be an
exciting event right in our own backyard!

Jason's Fishing Report Local Fishing in Esterillos & Deep Sea Fishing From Quepos
Trolling along the Parrita River mouth with spoons and rapalas have been productive to catch several king mackeral, Rooster fish & Jacks. You can even catch some sea bass and red snapper when you add some weight to get the line down. Fishing has also been good from the beach in Bejuco with live bait. Just the other day Frank, one of our security guards, brought in a 15 lb rooster and two jacks. Deep sea fishing has been equally fruitful- group of guests went out deep sea fishing in February and caught (and released) more than 10 sailfish!
