Tropical Sangria
5 Lb Watermelon chopped seedless 1/4 Cup lemon juice
750 ml Cabernet Sauvignon Rose (Sana
Digna / Chilean, is my personal favorite)
3 oranges in wedges
1.5 L (about 6 cups) cold Lemonade
1/2 cup of Strawberrys cut in halfs
Blend 1/2 cup of watermelon with the lemon juice till blended.
Stir in the wine.
Pour in a
pitcher the orange, the rest of the watermelon and the berries, with a lot of
ice, then pour in the wine mix and serve.

need a valid passport to travel to Costa Rica - please be sure to check the expiration date before you
travel! They require at least 90 days left on your passport to enter Costa Rica. Make sure the kids have them too! US passports for children under the age of 16
are only valid for 5 years- after the age of 16 the passport is valid for 10
years.

Another great month here at Del Pacifico! Just in the past 2 weeks we have closed on 2 condominiums. So far this year, we have sold over $5,000,000 worth of lots, custom homes & condos. We are really energized right now and gearing up for the summer vacation season with the Surf Games and a couple more Gatherings! After spending the summer in Costa Rica where he will be doing a reforestation project, he will head to Ohio Wesleyan in the fall. Susannah Hoblitzell, daughter of Leslie, graduated on May 30th from Towson High School. She is spending the summer working before beginning at Stevenson University in August. Congrats to both of you! We are so proud!

Local News Report New and note worthy in Costa Rica
Surf's Up!! 16 year old
Carlos Munoz of Esterillos became the youngest National Surfing Champion in
Costa Rican history when he won the National Surf Circuit in Playa Hermosa
recently. Also competing was Lisbeth
Vindas from Jaco who won her 7th women's national title. These contests are leading up to the 2009
World Surfing Games which are to take place just up the road from Del Pacifico August 1 to August 8 at Playa Hermosa. Be sure to make
your travel arrangements now before it is too late to find accommodations for
this exciting event!
Del Pacifico's Own, Mike Torino, Hanging Ten on Playa Bejuco The Road to the FIFA World Cup As we get ready to send this out, the US National Soccer team is gearing up for a FIFA World Cup qualifying match against Costa Rica. It is set to take place tonight, Wednesday, June 3, at the Saprissa Stadium in San Jose. Good news for Costa Rica- the US, who is currently in the lead of the 6 nation qualifying group, has never won a qualifying match in Costa Rica.
Reality Television Hits Costa Rica...We don't know whether to be excited or upset about this but the new season of "I'm a Celebrity...Get Me Out of Here" is currently being filmed in an undisclosed rain forest area of Costa Rica. Tune into NBC Monday through Thursday at 8pm to check out all your favorite D-List celebrities as they brave the wild of Costa Rica. Although, why anyone would want to be rescued from Costa Rica is a mystery to us!
Airport Upgrades Last week a Houston-based company was approved for a 25 year contract to replace Alterra as the manager of the San Jose Airport (Aeropuerto Juan Santamaria). According to the agreement, the company (Houston Airport System Development Corp.) will begin a $180 million remodel of the airport on July 1. Proposed improvements include lengthening the runways, doubling the size of the airport terminal and demolishing and rebuilding the C, D & E terminals.
New Low for Inflation Inflation in Costa Rica for the months between December 2008 and May 2009 was only 0.62%. This is the smallest increase in the past 32 years since records have been kept! What better time to invest?

Leslie's Gathering Report The April/May Gathering...
May 1st was the
beginning of the "Green Season" which we were lucky to share with our guests at the April/May Gathering. We had an energetic group of 37 guests that
enjoyed the tropical rain and beautiful rainbows. Friday everyone rode horses in the rain and dried off in the hot sun. On Saturday the group was split between the Chiclets Canopy zip line, the Jungle Crocodile Safari and the Manuel Antonio National Park tours. That night we were treated to entertainment by a group of native dancers who not only showed us the national & local dance traditions but also some basic Latin dancing. Once the show was finished, the colorful
dresses and moving music got the whole group dancing! We still have some space for the June Gathering- be sure to contact me for more information! Click here to download the itinerary.

Lolly's Day Trips Our Veteran Traveler Shares Her Knowledge
If you are looking for a fun day
trip while visiting Del Pacifico, I have a couple of recommendations. The first is a scenic excursion to Isla Tortuga aboard the Manta Ray
catamaran. This tour is operated by Calypso Crusises , and includes
round-trip transportation from Del Pacifico to Puntarenas, and 90 minute excursion aboard the Manta Raya catamaran
which a full bar, a fishing platform and
two whirlpool tubs. On the trip you may see
manta rays, sea turtles and pilot whales. Once at Isla Tortuga, you are served
a buffet lunch on the beautiful white sand beach. You then have the option to explore via kayaking,
snorkeling or hiking the surrounding area.
Or, just relaxing in the sun. The cost per person is about $100,
depending on the season.
Another popular day-trip is white
water rafting on the Rio Sevegre. We recommend the Amigos del Rios tour group in Manuel Antonio. The trip includes transportation from Del Pacifico
to Manuel Antonio where you stop for breakfast.
After a rugged drive through a date nut palm plantation and mountainous
terrain you arrive at the Class III Rio Sevegre. The trip is rated for "adventuresome beginners
to experienced rafters." The scenic trip
allows for time to enjoy the spectacular scenery through the mountains and the
primary rainforest as well as experiencing the rush of the white water. It is a
really exciting day. The cost per person
is about $85 per person, which includes round trip transportation, breakfast
and lunch.

Jason's Fishing Report Local Fishing in Esterillos & Deep Sea Fishing From Quepos
The local fishing in Esterillos and Bejuco has been really good lately. In the estuary of
Playa Bejuco one of our guards, Ricardo, caught a dozen of Snook (Robalo) and
Snapper (Pargo) - all in about the 1-5 pound range. He first tried
with live shrimp as bait but then fish were not interested so then he tried casting some small white
jigs and he said it was like the difference between night and day.
Fishing in some of the local boats has been
decent for bottom fishing for Snapper, Sea Bass (Corvina) and trolling for
Roosterfish (Gallos), Jacks and Mackerel. The other day I went out in front of
Bejuco about 2 miles out on a reef and we pulled in 33 red snappers.
The surf fishing is still slow but should be getting
better soon. We will keep you posted.
 According to our friends at the Quepos marina the deep sea fishing boats have been catching
a lot of yellow fin tuna, Mahi Mahi and also some nice roosterfish.

Fernando's Recipe Corner
Picadillo de Papa
Ingredients:
3 Lb Potatoes
1/2 Lb Ground Beef
1/2 Lb Ground Pork
Cilantro
1 red bell pepper
1 Onion
2 tbsp beef consomme
1 Tbsp achiote
2 Garlic cloves
Salsa Lizano
salt
oil
Preparation:
Peel & cut the potatoes and cook them until they are soft.
Finely mince the onion, cilantro & pepper.
In a pot, mix the meat with a little bit of achiote, the pepper, onion, salsa lizano & the consomme.
Finely mince the garlic & sautee in a little bit of oil; then remove from heat and set aside.
When the meat is browned, add the potatoes and the garlic, stir well and finally add the cilantro. |
Tim's Eco Facts
The
Long-tailed Manakin is found in Costa Rica,
El Salvador, Guatemala, Honduras,
Mexico, and Nicaragua.
Like the males many species, the male Manakin has to be bright, colorful, and a
really good dancer if he wants to get the girl. He's a cute little guybut it's a big jungle, and the Manakin's have figured out something that gives
them an edge...a good wingman.
The ladies of the species know where to go to find good dancers, and that's because the male Manakins
have developed the ultimate "gentleman's agreement". Rather than
compete for females, "male long-tailed Manakins co-operate with their friends,"
says James Morgan, a science reporter for BBC News. The gist is
that two male birds team up and dance together to create a reputation among the
females that their piece of the jungle is the place where good males are found.
The alpha gets the girls until he dies, then the beta inherits as the new alpha,
and he gets all the girls that come to the hotspot he helped establish.
